It’s easy to make a healthy version for a delicious snack.
Combine the following in a bowl to a batter consistency
- Buckwheat flour
- An egg
- Shredded coconut
- Peanut butter
- Quinoa flakes
- Almond meal
- Almond milk
Also try by starting with a buckwheat flour base and trying different ingredients such as cacao, mesquite, coconut oil, lime, spelt flour, flaxseed, chia, cinnamon etc.!
I recently blogged about Kyneton market in Victoria. while at the market, a lady selling peanut stopped us and asked if we wanted to sample some peanut butter. I don’t like peanut butter but was happy to try a little bit. To my surprise it was delicious! I bought a jar knowing that my husband would also eat some of it too. The peanut butter was home made using peanuts from Queensland and had not added oils or sugar. It was peanuts and salt. As soon as I got home I ate some out of the jar with a spoon and have hubby a taste too. Now to the shameful part of the story…..the whole jar was gone within 3 days!! And I ate 99% of it!! Yum! Probably a little too much salt though. However, I have a new motto and this image sums it up perfectly:
